Penne, which means "pen" in Italian, owes its name to its shape. The tubular form with angled ends is inspired by the goose feather of an old-fashioned ink pen. The large diameter and ridges of Penne make it ideal for holding sauces. Penne pairs well with coarser sauces based on meat or vegetables, or with spicy tomato-based sauces. Penne is also very suitable for baked pasta dishes.
The pasta is shaped using bronze molds and is dried for 22 hours at a temperature between a minimum of 36°C and a maximum of 55°C. Due to its rough and porous surface, the pasta can effectively absorb sauce and other ingredients.
