Description
Capellini is a thin Italian pasta with a diameter between 0.85 and 0.92 mm. Its delicate thinness makes it best suited for soups or dishes with light sauces, such as those with seafood or vegetables. It is also a popular choice for Asian dishes, as it easily absorbs the flavors of the accompanying ingredients.
The pasta is shaped using bronze dies and dried over 22 hours at temperatures ranging from a minimum of 36°C to a maximum of 55°C. The rough and porous surface allows the sauce and other ingredients to be well absorbed.
